Jicama Hash

INGREDIENTS:
2 cups peeled jicama, cubed
1 cup red bell pepper, diced
1 cup green bell pepper, diced
1/2 cup red onion, minced
1 tsp. garlic powder
1 tsp. onion powder
1 tsp. smoked paprika
1/2 tsp. sea salt

DIRECTIONS:
1) Wash hands well with soap & water. Rinse and rub produce with just water.
2) Have an adult remove the skin on the jicama using a sharp knife.
3) Dice jicama, green bell pepper, red bell pepper, and red onion into small cubes.
4) Place oil in a medium-sized pan over medium heat
5) Add jicama to pan and cook for 2 – 3 minutes
6) Add 2 tablespoons water to pan and cover with a lid. Allow jicama to steam for 10 minutes. Add 1 more tablespoon of water if needed.
7) Add red onion and bell peppers. Mix everything with a spatula.
8) Add spices to pan and mix everything together.
9) Cook for 8-10 more minutes, until onions are translucent and bell peppers are soft. Serve with a side of scrambled eggs or tofu!
